Crispy Cabbage & Carrot With Coconut


It's been quite a while that I have blogged any of my recipes. I will try to be more regular from now on. Got inspired after watching the movie "Julia & Julie" which is on the true story of Julia Child, the writer of Mastering the art of French Cooking!

So here's a quick recipe-

Ingredients -

Shredded cabbage
Grated/Chopped Carrot
Oil
Mustard seeds
Channa Dal
Urad Dal
Green chillies
Ginger(grated)
Haldi
Dry Red Chilli
Curry leaves
Hing
Salt
Lemon Juice

Put some oil in a pan and put in some mustard seeds. Cover it with a lid and let it splutter for 20 secs. Now add Chana daal- abt 1 tbsp and saute it for 30 secs. Next add Urad daal and saute it for 30 secs. Add hing and then curry leaves, followed by dry red chilly and chopped green chillies. Add ginger and fry it for a min. Add haldi and saute for few secs. Now add cabbage and saute it will its crispy. Add grated or chopped(into small pieces) carrot after a min. In the end add salt and stir for a min. Now add coconut(grated) and stir for another min. Now switch off the flame and add lemon juice before serving. Your yummy crispy cabbage is ready!!

Muesli Yoghurt Parfait

This is a very simple and nutritious dessert.
Soak your favourite muesli or granola in milk for about 5 mins. Whisk plain curd or flavoured curd till it becomes creamy. You may add some sugar in the curd if you are using plain curd.

Now take a wide glass and start layering. Put the first layer of muesli , then curd and then fruits of your choice - banana, strawberry, apples,berries. Repeat these layers and top it up with some honey.

There you have!!! A beautiful and quick dessert ready....

Corn Palak


Matar Ki Roti

To prepare this amazing matar ki roti, boil green peas. Then finely chop the peas, along with 2 green chillies. Now add in this salt, dhania powder, some chat masala and mix it well.

Use this mixture to fill in a small ball of dough as we do for preparing paranthas. The mixture should be of the same size as the dough ball. Roll it slowly, making sure that the mixture doesn't leak out. Now cook it over a tawa :-) It can be served with curd and pickle. 

Beetroot carrot Rice

Soak rice with about 2.5 times water(this may vary depending on the type of rice) for about 30 mins.

Put oil in a pan, once its moderately hot, add mustard seeds, cumin seeds, green chillies and saute it.

Now add dhania powder and some pav bhaji masala. Add finely chopped beetroot and carrot in this and saute it for about 3 mins. Closed the pan and let it cook for 2 mins. Now add rice along with water and mix it well. Add salt to taste. let it come to boil. Once it boils, slow down the stove and close it. let it cook for about 10-15 mins. Keep stirring in between to make sure that it doesn't stick to the bottom of the pan.

Once the rice is all cooked and ready, turn down the stove and add a good amount of lemon.

If you plan to keep it for later use, don't add lemon right away. Squeeze the lemon before consuming.

Amazing Beetroot Peanut Salad

Do try this interesting salad I made today. It tasted really amazing.

In a bowl, take some orange juice and juice of one lemon, add salt, cumin powder, chat masala and pepper in this while whisking. Now add extra virgin olive oil while whisking it. In this dressing, add shredded/finely chopped beetroot, carrot, onions, cilantro and crushed peanuts. Mix it well. Your salad is ready to eat. Feel the flavors burst in your mouth. You may chill this for an hour or so for better taste.

Shahi Paneer

This dish takes a bit of time to cook. First of all, fry some onions in a pan and then grind them along with garlic and ginger. Put this back in a pan and cook it till it becomes a bit golden in colour. Now add half a glass of milk in it, add a little at a time and keep stirring. Cook it for 3-4 mins . Now blend 3-4 tomatoes in a mixer and add them to the pan. Add degi mirch, shahi paneer masala, coriander powder, turmeric powder and garam masala. Cook till it leaves oil. Once it leaves oil, add enough water to make curry. Add salt to taste. Cook till it boils. Now add cubes of paneer and cook it at low flame for abt 2 mins by covering the vessel. Its done! Enjoy it with hot paranthas or roti.

Capsicum salad with tomato julliens and black grapes

I love this dish!
Its simple and healthy.... I was thinking of making a side dish with capsicum this afternoon..and ended up making this beautiful and flavor-full dish.
Just take a pan, put a spoon of olive oil in it... put in capsicum and saute it. Add some salt, pepper and herbal seasoning or oregano in it. Stir occasionally... just cook it for abt 5 mins ...and its done!
Do not overcook it as that would kill the juicy texture of capsicum. It tastes awesome...U can serve it with tomato julliens and black grapes.
U can try this dish with yellow or red bell peppers too.
